Canning and Picking

We are in the midst of picking every day now and canning every other day. Today we picked tomatoes, green beans, corn, banana peppers and cucumbers. We also canned nine jars of salsa and four of pickled banana peppers.
The garden is doing well despite the torrential rains that have become common most every day. Everything is wet and needs a couple days of no rain to dry out.
Also, our lemon trees are full of golf ball sized lemons and our fig trees are full too. Figs should come in the next 2 weeks while the lemons are due in the fall.

We picked more green beans today and also peppers, tomatoes, egg plant, cucumbers and raspberries. We also canned 5 pints of pickled banana peppers. The main crop of tomatoes is still a week or so away but we are picking 10-15 a day.

A typical summer scene in our kitchen- soaking corn for grilling and canning vegetables.

June 28 harvest

As you can see from the picture below, the green beans are in. We picked several cookings with more to come in the following days. We are also canning picked banana peppers today. They are sweet and are great as a garnish on salads. Tomatoes are also beginning to turn red and yesterday I had my first of many fresh tomato sandwich.
More to come!!!

As you can see from the picture, we picked five ears of corn from our corn patch. Last year we picked 52 ears and were finished with corn on June 5. This year because of the cooler Spring, we are just now beginning to harvest corn, We also picked a few cucumbers, banana peppers and green beans.
The next big harvest will be green beans and then hopefully the tomatoes.
Looking forward to that first tomato sandwich of the summer.Yummy !!.

Garden to table 2013

Welcome back to the Garden to table blog.
Once again I hope to inform you about what we grow in our garden throughout the summer and fall.
The biggest change in the garden is the layout. during the winter, I constructed 6 raised beds  with 2X10's that measure 9 feet by 3 feet. I used the early spring to place them in the sunniest part of the garden, till the soil and then fill them with at least 6 inches of new soil. There are 12 tomato plants in each bed. I'm excited to see if he raised beds increase the harvest.
We also built a trellis for the pole beans and that seems to be working well.
Because of our unusually cool spring. our harvest is at least two weeks behind but we are beginning to pick peppers bell, jalapeño and banana, cucumbers, egg plant, raspberries, and cherry tomatoes. The green beans will be ready in abundance this week and the corn looks close also.
Thanks for reading and feel free to comment.
